Every Christmas Eve, the other elves and I enjoy a hot, delicious bowl of risgrynsgröt, or rice porridge. This recipe serves four.
2 cups water
1/2 teaspoon salt
1 tablespoon butter
1 cup rice
4-1/3 cups milk
Ground cinnamon to taste
Bring the water, salt, and butter to a boil in a large saucepan with salt, butter. Add the rice, then cover and simmer on low heat for 10 minutes. Add the milk and bring to a boil. Turn the heat down to low, cover, and cook for about 30 minutes or until most of the liquid is absorbed.
Add sugar to taste and sprinkle with ground cinnamon. Serve warm. You can leave the saucepan covered on the stove until you’re ready to enjoy your risgrynsgröt.
